Ingredients


1 tbsp Orange juice (preferably fresh squeezed))
1 tbsp Pomegranate juice, unsweetened
1 tbsp Champagne vinegar
1 tbsp Extra virgin olive oil
1 tsp Orange peel (zest)
3 cup Arugula
1 medium Apple (diced or cut into matchsticks)
1 lemon wedge Lemon
1 medium Orange (cut into slices or wedges)
1 bulb(s) Fennel (sliced)
1 fruit Pomegranate (peel and reserve seeds)

Instructions


  1. Make dressing, in a small bowl whisk all dressing ingredients with a fork. Set aside.
  2. Squeeze lemon juice over apples pieces and toss gently.
  3. Assemble salad. Place arugula on a small salad plate. Top with your desired amount of apple, orange, and fennel pieces. Toss on some pomegranate seeds.
  4. Drizzle with the orange-POM vinaigrette.
  5. Grab a fork and dig in!

Notes:

Optional: To make this salad a meal add some protein such as chicken or turkey.

Also feel free to change arugula to mixed or mesclun greens.
