|3/4 cup||Peanuts, roasted (roasted, salted and chopped)|
|1/4 cup||Coconut, shredded, unsweetened|
|1/4 cup||Cilantro (coriander) (fresh)|
|1/2 tsp||Salt and pepper (use sea salt)|
|454 gm||Chicken breast cutlets (cubed, 1 inch - organic)|
|3 tbsp||Coconut oil (you may need to add more as you go)|
|1/2 cup||Mayonnaise (or vegan mayo)|
|2 tsp||Chili garlic sauce|
1. On a large, flat plate, combine peanuts, coconut flakes, cilantro, and 1/2 teaspoon of salt and pepper. Thread cubes of chicken onto a bamboo skewer and coat with peanut mixture, pressing gently to help it adhere to chicken.
2. On another large, flat plate, cover with paper towels. Heat the coconut oil in a large, non-stick skillet over medium heat and cook skewers until golden in color (2-3 minutes on each side). Transfer cooked chicken skewers to a plate with paper towel to cool.
3. In a small bowl, combine mayonnaise and chili-garlic sauce, to serve with the chicken skewers.
