2 head Lettuce, butterhead (Boston) ((peeled apart into leaves and washed))
1 medium White onion (diced)
3 stalk(s) Green onion (chopped)
1/2 pepper(s) Red chili pepper (also chile or chilli) (chopped)
2 clove(s) Garlic (minced)
1 cup grated Carrots
1 tbsp minced Ginger root
1 tbsp Extra virgin olive oil
1/4 tsp Sea salt, fine
1/4 tsp Black pepper
2 cup Lentils, red, cooked
2 tbsp Soy sauce (Or tamari)
1/4 cup Sesame seeds
1 fruit Lime (sliced into wedges)

Instructions


  1. Rinse lettuce heads with cold water.  Break each leaf off close to the core.  Set leaves aside.
  2. Finely chop the white onion, green onions, and chili pepper.  Set each aside separately.
  3. Peel and mince the garlic and set aside.
  4. Wash carrots.  Grate the carrots using the circle-holed side of the grater.  Set aside.
  5. Chop off a thumb sized end of ginger root.  Using a spoon, scrape off the skin.  Then very finely chop the ginger.  Set aside.
  6. Slice a lime into quarters lengthwise.  Set aside.
  7. Heat a large skillet over medium heat.  Add the olive oil and swirl it around.
  8. Add the onions, ginger, chili pepper, sea salt and pepper.  Stir well.  Sauté for about 5 minutes or until the onion is translucent.
  9. Add the garlic and sauté for another minute.  Stir well.
  10. Add in the ground turkey.  Break it up into small pieces as it cooks. It is cooked through once completely browned.
  11. Once browned, add in the soy sauce. Continue to sauté and stir until it is absorbed. Remove from heat.
  12. Spoon the turkey mixture into the centre of a lettuce leaf.  Top with green onion, carrots, and sesame seeds.
  13. Squeeze a lime wedge over top, wrap and enjoy!

Notes:

  • Feel free to use any other legume you prefer.  This tastes best with lentils & pinto beans.
