|2 tbsp||Cilantro (coriander) (fresh; chopped)|

1. Wash and dice tomatoes and cucumber, peel and dice avocados and red onion, and wash and chop cilantro.
2. Add the tomatoes, cucumber, avocados, red onion, and cilantro to a serving bowl.
3. Squeeze the lime juice over the top and drizzle with extra virgin olive oil. Gently toss.
4. Taste and add salt as needed.
