4 medium slice Bacon (cut into smaller pieces)


  1. Cut into an avocado lengthwise until you hit the pit.  Rotate the knife around the entire pit until you have two halves.  Carefully hit the pit with the knife until it punctures it.  Turn the knife to pop out the pit.
  2. Add bacon strips to a cold pan.  Turn the burner onto medium heat.  Fry until bacon is at desired crispness.  Remove from heat.
  3. Transfer bacon strips to a cutting board.  Finely chop the bacon into small cubes.
  4. Add chopped bacon to the pit hole of each avocado half.


Top it off with balsamic reduction.
To make the Balsamic Reduction: Place desired amount of vinegar (at least 3 Tbsp) in a small pot. Bring to a boil and reduce until desired thickness.

For a vegetarian/vegan bacon substitute:  Toast 2 tbsp sunflower seeds lightly in a pan heated to medium-low.  Sprinkle with a pinch of salt.  Then, sprinkle seeds into the avocado pit.
