|1 tsp||Dijon mustard|
|1 tbsp||Lemon juice (or red wine vinegar)|
|2 green onion (stem)||Green onion, scallion, ramp (diced)|

1. Mix egg, mayonnaise, dijon mustard, lemon juice, avocado and green onion in a bowl.
2. Season with salt and pepper.
3. Serve on bread, lettuce wraps, as a dip for cucumber OR celery sticks, or as a traditional sandwich.
