2 tbsp Mayonnaise
1 tsp Dijon mustard
1 tbsp Lemon juice (or red wine vinegar)
1/2 avocado(s) Avocado (diced)
2 green onion (stem) Green onion (diced)
1 tsp Salt
1 tsp Black pepper


  1. Mix egg, mayonnaise, dijon mustard, lemon juice, avocado and green onion in a bowl.
  2. Season with salt and pepper.
  3. Serve on bread, lettuce wraps, as a dip for cucumber OR celery sticks, or as a traditional sandwich.
