In a large bowl, whisk together the eggs. Set aside.
Blend the bell pepper, avocado , onion and onion.
In a large skillet, heat the olive oil over medium heat. Add the pureed vegetable, salt and stir. Add the egg mixture.
Scramble the mixture for a few minutes.
Eat with 1 1/2 slices of yam or 2 slices of bread
