A simple salad featuring rich pine nuts and creamy avocado. Top with yesterday's leftover wild rice and shrimp (if eating on a day it's allowed).

Instructions
- If pine nuts aren’t toasted, heat them gently on medium or low in a frying pan but watch them carefully as they can burn quickly.
- Whisk together olive oil, lemon juice, salt and pepper.
- Toss everything into a bowl and enjoy.
- Add any other "goodies" such as shrimp, walnuts, pumpkin seeds, hemp hearts, and of course yesterday's wild rice.
