Avocado & Spinach Salad with Pine Nuts

A simple salad featuring rich pine nuts and creamy avocado. Top with yesterday's leftover wild rice and shrimp (if eating on a day it's allowed).

Ingredients


1 bag(s) Baby spinach (16 oz, washed and dried)
1 avocado(s) Avocado (sliced)
1/4 cup Pine nuts, dried (toasted)
1/4 cup Walnuts
1 tbsp Pumpkin seeds (pepitas)
1/2 tbsp hulled Hemp seeds, shelled
1 tbsp Pomegranate seeds (seeds, optional (for color))
3 tbsp Olive Oil, Extra Virgin
1 tbsp Lemon juice (fresh)
1/4 tsp Salt and pepper (each, or to taste)

Instructions


  1. If pine nuts aren’t toasted, heat them gently on medium or low in a frying pan but watch them carefully as they can burn quickly.
  2. Whisk together olive oil, lemon juice, salt and pepper.
  3. Toss everything into a bowl and enjoy.
  4. Add any other "goodies" such as shrimp, walnuts, pumpkin seeds, hemp hearts, and of course yesterday's wild rice.
