|1 tsp||Extra virgin olive oil|
|1/2 tbsp chopped||Shallots|
|1 medium egg||Egg|
|1 pinch||Himalayan sea salt|
|1 dash||Black pepper|
|1 slice||Whole grain bread|
1. Heat oil in a medium skillet. Add the shallot and spinach and cook over medium heat until spinach is wilted.
Place in a small bowl and set aside.
2. Add drop of oil. Pour beaten egg into the pan and season with salt and pepper.
Cook over medium heat until set, about 2 minutes.
3. Mash the avocado with a fork and spread evenly on piece of toast.
Top the avocado toast with spinach, scrambled eggs, and tomato slices.
4. Season with salt and pepper, to taste. Enjoy immediately.
To make this recipe Grain-Free - you can replace the bread slices with 2 thin slices of sweet potato, toasted in the toaster!
