Instructions
1. Toast the bread.
2. Fill a medium pot with 2 inches of water and insert a steamer basket. Bring the water to a boil over high heat.
3. Into a small bowl, scoop the avocado flesh from the peel with a spoon.
4. Add the lemon juice and salt. Mash together with a fork. Taste, and adjust the seasoning with more lemon juice or salt, if necessary.
5. When the water boils, add the spinach to the steamer basket. Cover and steam for 3 to 4 minutes, or until wilted.
6. Divide the avocado mixture between he two pieces of toast. Top each with half of the wilted greens.
