Bacon & Broccoli Crack Slaw

Ingredients


454 gm Bacon, uncured, Nature's Choice (chopped)
454 gm Green cabbage (coarsely chopped)
256 gm Broccoli florets (coarsely chopped)
1 tbsp Ghee (flavorless or ghee)
2 tsp Himalayan salt
1 tsp Black pepper (ground)
1 tsp Caraway seed (optional)

Instructions


  1. Chop the bacon into 1” size pieces and cook in a large saucepan for a few minutes, remove the bacon from the pan and set to one side

  2. Melt the ghee in the saucepan, add the broccoli and cook over a medium heat for 5 minutes

  3. Add the cabbage, salt, pepper and caraway seeds (if using) to the broccoli mixing together

  4. Cook for a further 10-15 minutes, the cabbage should be cooked through but still have a little bite to it ‘al dente’

  5. Return the bacon to the pan, add seasoning to taste and and continue cooking for a few more minutes

  6. Serve & enjoy
