The downside to healthy eating can sometimes be the prep time. Not the case with this super easy bacon, egg and spinach casserole that you could even make ahead


1 tbsp Coconut oil
12 cup Spinach (fresh)
10 medium slice Bacon
8 large egg Egg


  1. Preheat oven to 375.
  2. Cook spinach down in large pot with 1/4 cup water and make bacon according to package.
  3. Crumble bacon into little pieces.
  4. Beat 8 eggs and add to an 8 x 8 baking dish lightly grease with coconut oil.
  5. Add in spinach and bacon.
  6. Bake for 20-25 minutes or until the center is completely cooked. Enjoy!
