1/2 tbsp Ghee
100 gm Yellow onion (chopped)
199 gm Zucchini (sliced and quartered)
199 gm White mushrooms (sliced)
199 gm Bacon, uncured, Nature's Choice (chopped)
100 gm Sausage, chorizo, pork and beef
1 tbsp Paprika, smoked
1 tsp Cumin (ground)
1 tsp Hot pepper (chili) flakes ((optional))
1 tsp Salt and pepper
1 cup Bone broth, Organic
1/2 can(16oz) Crushed tomatoes canned
8 large Egg
1 tbsp Basil, fresh (chopped (optional))

Instructions


  1. Melt the ghee in a frying pan over medium heat and add the onion and zucchini, cook for 2 minutes, add the mushrooms and cook for a further 1 minute.
  2. Add the chopped bacon and chorizo and continue cooking.
  3. As the bacon begins to cook through, add all of the spices to the pan and cook for a further 2 minutes or until bacon is fully cooked through.
  4. Stir in the bone broth.
  5. Cover and sauté for 6 minutes until the zucchini is nearly cooked through.
  6. Stir in the crushed tomatoes, then create wells (gaps) for the eggs and gently crack the eggs into the wells.
  7. Cover the pan and cook over a medium heat for 6-8 mins until the eggs are cooked to your liking.
  8. Remove from the heat, sprinkle over the chopped fresh basil and serve immediately.
