Preheat oven to 350F. Like a baking sheet with parchment or foil paper.
Mix tigernut flour, nutritional yeast, garlic powder, onion powder, cumin, and salt in a large bowl.
Gently roll the chicken breast chunks into the dry mixture and coat evenly
Place on the prepared baking sheet and drizzle avocado oil over the chicken
Bake for 25 minutes.
to freeze, roll chicken in dry flour mixture, then freeze in a zip-top bag. Cook from frozen at 375F for 20-30 minutes, until cooked through and crisped on the outside.
