1 tbsp Coconut oil (or olive oil)
5 anchovy Anchovy (5-10 fillets, without liquid)
2 clove(s) Garlic (chopped)
1 cup Cherry Tomatoes
10 olive(s) Kalamata olives
2 tbsp drained Capers, canned
4 thigh(s) Chicken thighs, boneless, skinless (substitute with whitefish, if preferred)
1/4 cup Basil, fresh (small handful, optional)

Instructions


Preheat oven to 350 F. Heat oil in a heavy pan that can go in the oven. Add chicken thighs to brown and few minutes each side. Remove from the pan.

Add anchovies and gently cook for a couple minutes. Add the garlic and cook another minute. Add tomatoes, olives, capers and chicken thighs.

Turn down the heat and simmer gently. Place the lid on top and set in oven. Cook for 15 minutes. Give the dish a stir, then return uncovered and cook another 15 to 20 minutes.

Remove from oven. Top with fresh basil. Serve on a bed of spinach, or over spiralized vegetable noodles, or over pasta for the kids.

Note:

Taking the best sauce ever and making into its own dish. Not that it hasn’t been done before. But it’s the wonderful tangy FLAVOURS!!! They are so yum! This dish can also be used with fish.

Optional Serving: spinach, spiralized vegetable noodles, or pasta for kids.
