1/4 cup Cream of wheat, prepared
1 1/2 cup Almond milk, unsweetened
1/2 cup Almond milk, unsweetened (to mix with cream of wheat)
1 medium Egg
1 tbsp Granulated sugar
1/4 tsp Cinnamon
1 tbsp Butter, unsalted (softened)
1/2 cup Frozen berries

Instructions


  1. Preheat oven to 350°F.
  2. Warm the larger amount of almond milk in a small pot over medium heat.
  3. Mix the smaller portion of almond milk with the uncooked cream of wheat in a bowl. 
  4. When the almond milk in the pot starts to boil, add the cream of wheat-almond milk mixture to the pot and stir continuously so no lumps form. Cook for a couple more minutes and set aside to cool.
  5. In a medium-sized mixing bowl, beat the egg and stir in the sugar and cinnamon.
  6. To the egg mixture, add the cooled cream of wheat and butter. Mix well.
  7. Lay the frozen berries at the bottom of your single-serve ramekins or baking dish. Pour over the cream of wheat mixture.
  8. Bake for 25-30 min until firm.
