Ingredients


1 squash Spaghetti squash (halved lengthwise)
1 tbsp Extra virgin olive oil
1 pinch Salt and pepper
454 gm Ground turkey, extra lean
1/2 cup White mushrooms (sliced)
2 cup Baby spinach (packed or other leafy green)
1/2 cup Almond milk, unsweetened (or alternate milk of choice)
1/4 cup Pine nuts, dried
1/4 cup Hemp seeds, shelled (for sauce)
1 tbsp Garlic powder (for sauce)
3 tbsp Nutritional yeast (for sauce)

Instructions


  1. Preheat the oven to 375 degrees F and prepare a baking sheet.
  2. Cut spaghetti squash in half, lengthwise. Drizzle with olive oil, salt, and pepper and place face down on the baking sheet.
  3. Bake squash for 30 minutes. Carefully use a fork to scrape out/ fluff the stringy flesh (do not remove from squash).
  4. Meanwhile, in a saucepan over medium heat, saute the ground turkey, chopped mushrooms, and baby spinach until the turkey is cooked through. Season with salt and pepper. 
  5. To make the cream sauce, place the almond milk, pine nuts, hemp hearts, garlic powder, and nutritional yeast in a food processor or high-power blender. Pulse until the mixture is smooth and creamy.
  6. Evenly spoon the ground turkey mixture over the fluffed spaghetti squash halves.
  7. Top with cream sauce and bake in the oven for another 15 minutes.
