227 gm | Ham (cooked; diced) |
171 gm | Red bell pepper (chopped) |
114 gm | Green onion (chopped) |
142 gm | Cheddar cheese (shredded) |
1/4 cup | Heavy cream, 38% M.F. |
1 tbsp | Basil, fresh (chopped; optional) |
1 tsp | Salt and pepper (season to taste) |
Preheat the oven to 180 °C (350 °F)
In a large frying pan melt the ghee and sauté the ham for a couple of minutes until a little browned
Add the red bell pepper, scallions and continue cooking until tender around 3 to 4 minutes
Grease a 9 x 13 inch baking dish and spread the ham mixture over the base of the dish
Sprinkle with half of the cheese
Whisk the eggs, cream, basil, salt and pepper together in a large bowl and pour over the ham mixture.
Sprinkle the remaining cheese over the top
Bake in the oven for 30-35 minutes until cooked through.
Make sure you keep checking the omelette and if it looks like it’s getting a little too brown on the top, cover with foil for the rest of the cooking time
Cut into 4 portions & enjoy!
It goes nicely with some salad leaves on the side.
