3 cup chopped | Apple |
1/4 tsp | Cardamom, ground |
1/2 cup | Coconut sugar (plus 2 tbsp) |
1 whole lemon(s) | Lemon juice |
1 whole orange(s) | Orange peel (zest) |
3 cup diced | Rhubarb |
2 tsp | Tea, Earl Grey, dry |
Preheat oven to 350 F.
Place chopped rhubarb and apple in a medium casserole dish or oven-safe pot.
Add remaining ingredients and gently toss. Taste one chunk of apple and one chunk of rhubarb at this stage. They will both be nicely sugar-coated and crisp.
Bake uncovered for 15 minutes. Stir and bake an additional 15 minutes. Fruit should be tender.
Serve hot with ice cream or let cool (it will thicken) over (vegan) yogurt, ricotta, or oatmeal.
