1. Preheat oven to 400oF (200oC).
2. Chop and combine broccoli, bell pepper, zucchini, baby carrots, balsamic vinegar, olive oil, salt and pepper in a casserole dish. Mix well to coat veggies.
3. Place in oven and cook for about 60 minutes, tossing every 15 minutes.
