|1 cup||Broccoli florets|
|1 large pepper(s)||Red bell pepper (chopped)|
|1 medium||Zucchini (sliced)|
|5 medium||Baby carrots (chopped)|
|2 tbsp||Balsamic vinegar|
|2 tbsp||Olive oil|
|1 pinch||Salt (to taste)|
|1 tsp||Black pepper|
1. Preheat oven to 400F.
2. Chop and combine broccoli, bell pepper, zucchini, baby carrots, balsamic vinegar, olive oil, salt and pepper in a casserole dish. Mix well to coat veggies.
3. Place in oven and cook for about an hour, removing every 15 minutes to toss.
Feel free to use vegetables of your choice such as mushrooms, cauliflower, sweet potatoes etc.
