This Banana Berry Ice Cream is packed with natural sweetness from fruits and is a nutritious alternative to traditional ice cream, perfect for kids and adults.
Ingredients
3 medium
Frozen banana
(ripe; sliced)
1 cup
Frozen berries
(mixed; (such as strawberries; blueberries; raspberries), frozen)
1/2 cup
Greek yogurt, plain, fat-free
(plain Greek)
2 tbsp
Honey, raw
(or maple syrup (optional; adjust sweetness based on preference))
1 tsp
Vanilla extract, pure
Instructions
Prepare the Frozen Fruit:
Slice the bananas and place them along with the mixed berries in a single layer on a baking sheet lined with parchment paper. Freeze for at least 2 hours or until solid.
Blend the Ingredients:
In a food processor or high-speed blender, combine the frozen bananas, frozen berries, Greek yogurt, honey or maple syrup (if using), and vanilla extract.
Blend Until Smooth:
Blend the ingredients until smooth and creamy. You may need to stop and scrape down the sides of the blender or food processor a few times to ensure everything is well combined.
Serve Immediately or Freeze for Firmer Texture:
For a soft-serve consistency, serve the ice cream immediately after blending.
For a firmer texture, transfer the mixture to a freezer-safe container, cover with plastic wrap or parchment paper pressed onto the surface to prevent ice crystals, and freeze for 1-2 hours.
Serve:
Scoop the banana berry ice cream into bowls or cones. Garnish with fresh berries or a sprinkle of granola if desired. Enjoy this healthy and delicious treat!
Notes:
You can customize this recipe by using different frozen fruits such as mango, pineapple, or cherries.
To make it dairy-free, substitute the Greek yogurt with coconut yogurt or almond milk yogurt.
This ice cream is naturally sweetened by the fruit, but you can adjust the sweetness with honey or maple syrup according to your taste preferences.
