Strawberry Cream Chia Pudding

Ingredients


1 cup whole Strawberries (pureed)
1/2 cup Coconut milk, reduced fat
1 tsp Vanilla extract, pure
2 tsp Lemon juice
1 dash Cinnamon (optional)
5 tbsp Chia seeds, ground
1 medium kiwi(s) Kiwi fruit (optional)

Instructions


  1. Mash the banana until it reaches a pureed texture.
  2. In a bowl, stir together the coconut milk, vanilla, lemon juice, and cinnamon. 
  3. Add the chia seeds and allow to soak in the coconut milk mixture for 5 minutes.
  4. Mix in the banana puree.
  5. Divide the mixture into 3 bowls or mason jars.
  6. Garnish with kiwi or other favourite fruit.
