Ingredients


2 cup Almond flour/meal, Bob's Red Mill (or GF flour alternative)
3 medium Banana (s) (or 4)
3/4 cup Medjool date (pits removed)
1 tbsp Baking powder
2 tsp Apple cider vinegar
1/2 cup Coconut cream
1/4 cup Almond butter (or seed butter of your choice)
1/3 cup Pumpkin seeds (pepitas)
1/3 cup Coconut flakes, unsweetened (can use cacao nibs or dark chocolate chips)

Instructions


  1. Add almond flour or alternative to a bowl with baking power, pumpkin seeds and coconut flakes, stir well and set aside.
  2. Blend together bananas, dates, apple cider vinegar, coconut cream and nut butter.
  3. Add blended ingredients to flour mixture and stir well. 
  4. Line cupcake tin with parchment paper cups, pour batter into each space 3/4 full.
  5. Bake at 350F for 20-25 minutes. Enjoy!
