Ingredients


2 cup Baby spinach
1 tbsp Canola oil
2 tbsp Cashew nuts, raw (chopped)
1/8 tsp Cayenne pepper (or to taste)
1/2 stalk(s) Green onion, scallion, ramp (chopped)
2 tbsp Lime juice (fresh)
1/2 cup Mango
2 tbsp Mint, fresh (chopped)
1/2 cup diced Pineapple
1/4 tsp Salt
1 medium pepper(s) Red bell pepper (chopped)
2 tsp Wine vinegar

Instructions


Whisk lime juice, oil, green onion, vinegar, salt and cayenne in a medium bowl.

Add pineapple, mango, bell peppers, baby spinach, mint and cashews; toss to coat and serve.
