| 1 medium | Banana (s) (ripe) |

| 1/2 tbsp | Chia seeds (optional) |
| 1 tsp | Vanilla extract, pure |
| 1 cup slices | Strawberries (topping, mashed) |

| 2 tbsp | Peanut butter, natural (optional thin spread - any nut butter) |
1.Heat a skillet or griddle to medium high heat like you would for pancakes
2.Blend first 4 ingredients on low until fully mixed (30-60 seconds)
3.Spray griddle with non-stick cooking spray
4.Pour ¼ cup of batter for each banana pancake
5.Allow it to cook for 2-3 minutes or until cooked on the underneath side (it will not brown as much as pancakes)
6.Using a spatula, flip the banana pancake and repeat cooking on the other side
7.Serve hot or cold with optional toppings or on their own
*They roll up nicely like a crepe and are easy for grab ‘n go snacks or breakfasts so make extra.
