Banana Pancakes (SCD)

1 large Banana (s)
1 tbsp Peanut butter, smooth
1 large egg Egg
1 1/2 tsp Coconut flour
1 tsp Honey
1 dash Vanilla extract, pure
1 tbsp Coconut oil


  1. Add all ingredients to a mixing bowl

  2. Whisk until smooth - you can use an electric mixer if you want. My goal was to minimize cleanup

  3. Melt half the butter (or coconut oil) in a frying pan or griddle over medium heat

  4. Spoon silver dollar size pancakes into your pan. I usually do three at a time

  5. Cook about three minutes - until top bubbles and edges look slightly done

  6. Gently flip pancakes over. They should be golden brown on the bottom

  7. Cook about two - three minutes until the other side is golden brown. You can tell when pancakes are done if you press gently on the top with a spatula and it springs back

  8. Remove from pan and repeat with the rest of the batter

  9. Top with whatever topping you like - honey, peanut butter, butter, fruit, etc
