Ingredients


1/2 cup Rice flour, brown
1/2 cup Quinoa flour
1/2 cup Tapioca starch
1 tsp Baking powder
1/2 tsp Cinnamon
1/4 tsp Nutmeg, ground
1 pinch Salt
1 medium Banana (s) (mashed)
2 medium Banana (s) (sliced )
2 medium Egg (separated, 1 yolk + 2 whites)
1 1/2 cup Soy milk, unsweetened
1 tsp Vanilla extract, pure
1 tbsp Maple syrup, pure
4 medium Strawberries (or fresh cherries)

Instructions


  1. Turn waffle iron, allowing it to come up to temperature.
  2. Meanwhile, combine the flours with baking powder, spices, and a pinch of salt.
  3. In a separate mixing bowl, you’ll want to mix the banana, egg yolk, milk and vanilla – beating them evenly together until everything is smooth. 
  4. Mix wet ingredients with dry. Don't over mix.
  5. In another bowl, gently beat egg whites until you see tiny little white peaks, at which point you’ll want to fold this into the rest of the batter.
  6. Grease your waffle iron and then pour in just enough batter to fill the pattern.
  7. Cut your waffles into triangles and arranged banana slices on top of the "cone". Use the strawberry as the cherry and decorate with whatever you'd like (see "Notes" below). Then drizzle waffle with maple syrup.

Berries, sesame seeds, dark chocolate chips, hemp seeds, shredded unsweetened coconut, etc.
