|1 1/2 cup||Spelt flour|
|2 1/4 tsp||Baking powder|
|1/2 tsp||Sea salt|
|1 cup||Almond milk, unsweetened (buttermilk or rice milk)|
|1/4 cup||Applesauce, unsweetened|
|1 medium||Banana (s) (mashed)|
|1 tbsp||Honey (organic)|
|1 tsp||Vanilla extract, pure|
|1 tsp||Coconut oil (or ghee)|
1. Mix together flour, baking soda, salt, cinnamon. Set aside.
2. Mix together mashed banana, apple sauce, honey and vanilla in another bowl. Add buttermilk. Combine with flour mixture.
3. Heat a frying pan to medium low. Melt ghee or coconut oil in the pan. Using a ¼ cup measure, pour batter into frying pan. When pancakes begin to bubble, turn over and cook on the other side.
Tip: To make your own buttermilk add a teaspoon of white vinegar to 1 cup of almond milk.
