1 1/2 cup Spelt flour
2 1/4 tsp Baking powder
1/2 tsp Sea Salt
1 dash Cinnamon
1 medium Banana (s) (mashed)
1/4 cup Applesauce, unsweetened
1 tbsp Honey (or maple syrup)
1 tsp Vanilla extract, pure
1 cup Soy milk, unsweetened, plain (or milk of choice)
1 tsp Coconut oil (or ghee)
8 tbsp Yoso Almond and Cashew Vanilla Yogurt (or yogurt of choice)
8 tbsp Walnuts (crushed)
2 medium Banana (s) (sliced; or fruit of choice)


  1. Mix together the flour, baking powder, salt, and cinnamon. Set aside.
  2. In a separate bowl, combine the mashed banana, applesauce, honey, and vanilla. Stir in the soy milk.
  3. Add the wet ingredients to the dry ingredients and stir to combine.
  4. Heat a frying pan over medium-low heat and melt the coconut oil. Using a ¼ cup measure, pour batter into the frying pan. When pancakes begin to bubble, turn over, and cook on the other side.
  5. Serve with a dollop of yogurt and fruit of choice.


Quick Tip

  • To make your own dairy-free buttermilk add a teaspoon of white vinegar to 1 cup of almond milk.
