2 large egg Egg
1/2 tsp Vanilla bean paste (or vanilla extract)
3/4 cup Soy milk, unsweetened (or 2% dairy milk)
1/2 cup Greek yogurt, plain, 2% M.F.
1/4 tsp Baking soda
1 1/4 cup Almond flour/meal, Bob's Red Mill
1/4 cup Walnuts (chopped)
4 tbsp Greek yogurt, plain, 2% M.F.
1 tsp Erythritol (granulated; optional; or powdered Splenda)
1 tsp Maple extract
1/4 tsp Cinnamon (or nutmeg)
2 tbsp Soy milk, unsweetened (or 2% dairy milk)
1 medium Banana (s) (sliced)

Instructions


  1. Wet Ingredients: Mix together egg, vanilla, 3/4 cup milk, and 1/2 cup yogurt. Set aside.
  2. Dry Ingredients: In a separate bowl, mix together baking soda, almond meal/flour, and walnuts. 
  3. Batter: Add dry ingredients to wet ingredients and mix until well combined. Let batter rest for 5 minutes.
  4. Heat a medium pan or griddle on medium high heat. Melt 1 tsp of butter on the pan (you may need to add more butter as you go).
  5. Pour 1/4 cup of batter onto the pan (if your pan is big enough you may be able to fry 3 - 4 pancakes at a time).
  6. Leave the pancake to cook without touching it for 2-3 minutes. When bubbles appear on the edges and the bottom is browned, carefully flip the pancake onto the other side to cook for 2 minutes.
  7. Maple Yogurt Sauce: Mix together 4 tbsp yogurt, maple extract, cinnamon or nutmeg, and 2 tbsp milk.
  8. To Serve: stack the pancakes into 2 piles, top each pile with 1/2 of the banana slices, and drizzle with maple yogurt sauce.
