Sweet Corn & Almond Salad

15 leaf Basil, fresh (chopped)
2 tbsp Olive Oil, Extra Virgin (plus extra to brush)
1/4 cup Slivered almonds
4 medium ear Sweet yellow corn (husks removed, or cobs quartered)
1 tbsp Wine Vinegar
1 large Yellow onion (halved, thinly sliced)
1 cup Cherry Tomatoes (quartered)


Boil the corn cobs for 15min or until desired tenderness.

Meanwhile combine the tomato, onion, basil leaves, almonds, oil and vinegar in a bowl, season with sea salt and freshly ground black pepper.

Divide the corn among plates, top with salad and serve immediately.

Optional to barbecue the corn.
