Basic Baked Chicken

227 gm Chicken breast, boneless, skinless (or thighs)
1/4 tsp Salt
1/4 tsp Black pepper
2 tbsp Extra virgin olive oil


  1. Preheat oven to 425°F (218°C).
  2. Season both sides of the chicken with salt and pepper. Place chicken in a bowl along with olive oil (and other optional desired spices, see notes). Stir until chicken is evenly coated with oil and seasonings if using.
  3. Place chicken in a baking dish and bake for about 20 minutes, or until the internal temperature reads 165°F (74°C). Take out of the oven, cover the dish and let it sit 5-10 minutes to allow the juices to redistribute throughout the meat. Serve with veggies!

  • Omit black pepper.

  • Dried thyme, oregano, paprika, rosemary, lemon.
