Season both sides of the chicken with salt and pepper. Place chicken in a bowl along with olive oil (and other optional desired spices, see notes). Stir until chicken is evenly coated with oil and seasonings if using.
Place chicken in a baking dish and bake for about 20 minutes, or until the internal temperature reads 165°F (74°C). Take out of the oven, cover the dish and let it sit 5-10 minutes to allow the juices to redistribute throughout the meat. Serve with veggies!
