2 cup | Polenta, dry |

1. Combine water, polenta, and salt in a large pot with a lid and bring to boil on stovetop.
2. Once pot is boiling make sure to stir consistently using a long handled wooden spoon—be careful not to burn yourself as polenta will bubble and splat.
3. Reduce heat to low boil and continue stirring frequently to avoid clumping.
4. When moisture has been mostly absorbed by polenta, stir one more time, cover pot with lid, and turn off heat.
5. Allow polenta to steam the rest of the way to perfection for another 15 minutes.
6. Spoon polenta from pot into desired mold, a pie pan if making polenta pie or a baking pan if you desire slices. Or, leave in pot and simply scoop to serve.
