1 cup | Extra virgin olive oil |
6 tbsp | Red wine vinegar |
3 tbsp | Maple syrup, pure |
1 tbsp | Dijon mustard |
1 pinch | Himalayan sea salt |
1/2 tsp | Black pepper (or a couple of turns of cracked pepper to taste) |
Mix all ingredients in a bowl and whisk together or you can put them all in a mason jar and shake.
Store in an airtight container in the fridge for up to 2 weeks.

Use honey instead of maple syrup.
Add spices or herbs to add more depth of flavour to it.
