3 1/2 cup White mushrooms (halved (about 8 oz))
2 cup sliced Carrots (diagonally)
1 1/2 cup chopped Yellow onion (coarsely)
1 1/2 cup diced Celery
2 clove(s) Garlic (minced)
1 1/2 cup Water
1 cup Wine, table, red (dry(cabernet sauvignon))
1 1/4 tsp Kosher salt
1/2 tsp, leaves Thyme, dried
1/4 tsp Black pepper (coarsely ground)
851 gm Tomatoes, canned, stewed (no salt added)
2 leaf Bay leaf
64 gm Olives (canned sliced ripe olives, drained)
2 tbsp Red wine vinegar
1/4 cup Parsley, fresh (flat leaf, chopped)

Instructions


Brown beef in non-stick pan with no calorie cooking spray over medium high heat.Remove meat from pan.Add mushrooms and next 4 ingredients;cook 5 minutes, stirring occasionally. Return beef to pan. Stir in .1.5 cup of water and next 6 ingredients; bring to boil. Cover, reduce heat, and simmer 1 hour. Stir in olives and, and cook for 30 minutes or until beef is tender. Discard bay leaves. Stir in vinegar. Sprinkle with parsley.
