Beef with Pak Choi, Mushrooms & Noodles

75 gm Rice noodles, dry
115 gm Beef, top sirloin, lean
1 tsp Extra virgin olive oil
1 tsp Cumin
1 pinch Sea Salt
1/2 medium Red onion (finely sliced)
1 piece, 1-inch Ginger root (peeled, finely sliced)
1 pepper(s) Red chili pepper (also chile or chilli) (de-seeded, finely sliced)
1/4 cup Shiitake mushrooms, raw (torn)
1/4 cup Oyster mushroom (torn)
200 ml Chicken broth (stock), low sodium
1 cup shredded Chinese (pe-tsai or napa) cabbage, raw


Boil the kettle and soak the noodles in the boiling water according to the packet instructions. Meanwhile, rub the beef with olive oil, sprinkle with the cumin and a small pinch of salt and rub all over.

Place in a really hot frying pan and sear on all sides. Add the onion, ginger and chilli and cook for a couple of minutes, then add the mushrooms, stock and Chinese cabbage.

Drain the noodles and add them to the pan. Stir around, and correct the seasoning. Slice up the beef and serve the noodles and cabbage in a big bowl, with the beef slices on top. Pour over the broth from the pan.

Serve and enjoy!
