2 cup Lettuce, spring mix (mesclun)
1 beet(s) Beets, raw (chopped fresh)
1 cup Quinoa, cooked
1 cup shredded Chicken, cooked (you can buy a cooked rotisserie chicken and use the rest for another meal)
1 green onion (stem) Green onion, scallion, ramp (finely diced)
2 tbsp Goat cheese, soft (omit for dairy free)
1 tbsp Walnuts
1 tbsp Extra virgin olive oil
1 tbsp Balsamic vinegar
1 pinch Sea salt
1 dash Black pepper

Instructions


1. On a plate, layer the ingredients in order.
2. In a small bowl whisk together oil and vinegar and season with sea salt and pepper. Drizzle over salad.
