Bell Pepper Fried Eggs

2 small egg Egg
1 small pepper(s) Red bell pepper (sliced crosswise, use different colours of peppers)
1/4 cup Baby spinach
1 small Cucumber (peeled or cut into long thin strips)
1 slice Whole grain bread (toasted)
2 tsp Extra virgin olive oil
1 pinch Salt and pepper (sea salt)
1/4 avocado(s) Avocado (sliced)


  1. Heat pan on medium-high heat.
  2. When the pan heats up, pour in 1 tsp olive oil and place pepper ring into the pan to cook for 2 minutes.
  3. Crack egg into small bowl individually
  4. Flip pepper ring, and crack each egg into a small bowl individually. 
  5. Carefully pour in one egg into each pepper ring and cook for 3-4 minutes.
  6. Meanwhile, toast the bread and cut into triangles. Drizzle with 1 tsp olive oil, salt, and pepper and toss. 
  7. Arrange the bell pepper sunny-side up egg onto a plate using cucumber strips as the flower stem and the baby spinach and avocado slices as the leaves. Serve with a side of seasoned toast.
