Berry Asparagus Salad with Tahini Dressing

2 cup Asparagus
4 cup Arugula
1 cup Radish (Sliced thinly)
1 cup slices Strawberries
1/4 cup Tahini
1 whole lemon(s) Lemon juice
2 tbsp Water, filtered


  1. Trim woody ends off asparagus and cut spears in half.
  2. Fill a steamer pot with water and bring to boil. 
  3. Place asparagus in the steaming basket and cook for about 5-7 minutes, or until tender (the thicker the spears, the longer they will take to cook). 
  4. Remove steamer from the stove and run asparagus under cold water until cooled.
  5. Fill the bottom of the salad bowl with arugula (or mixed greens). 
  6. Top with sliced radishes, strawberries, and asparagus.
  7. In a small jar, combine the tahini, lemon juice, and water. Shake well to combine. Add more water to thin if necessary.
  8. Drizzle desired amount of dressing over top of the salad.
