Berry Delicious French Toast

To make this healthy, it is important to use a good quality whole grain bread. I love spelt or rye sourdough!

Ingredients


3 medium egg Egg (beaten)
1/2 cup Almond milk, unsweetened
1/2 tsp Cinnamon
4 slice Spelt and Rye bread
1/4 tsp Vanilla extract, pure
1 pinch Sea salt
1 cup slices Strawberries
1 cup Blueberries
1/4 cup Water, filtered
2 tbsp Coconut oil

Instructions


  1. Whisk together eggs, almond milk, cinnamon, vanilla and sea salt.
     
  2. Heat a saucer up over medium heat. When warmed, add berries and warm over low heat until softened (optional: you can add a tbsp of pure maple syrup).
     
  3. Heat another large frying pan over medium heat and add coconut oil.
     
  4. Dip bread slices into the egg mixture so that both sides are evenly covered and place in the frying pan, allow each side to brown.  About 1  minute each side..  Repeat for each slice and set aside.
     
  5. When the berries have reduced and the water has evaporated, remove from heat and set aside. 
     
  6. Plate two pieces of french toast per plate and top with berry mixture
