A smaller version of an Italian favourite!


1 dough ball (1lb) Pizza dough, commercial (quartered)
1 cup Tomato pizza sauce, canned
1 1/2 cup shredded Mozzarella cheese
1 medium egg Egg (beaten)
200 gm Pancetta, lean
1 cup diced Pineapple


  1. Roll four mini pizza doughs into oval shapes. Place a small amount of pizza sauce, pancetta, cheese, and pineapple inside the round and fold over, pinching the edges and folding over a little.
  2. Brush each one with a bit of egg, beaten. Bake 425°F (220oC) for about 10 - 15 minutes (until it sounds hollow when you tap it). Serve with extra pizza sauce for dipping.


Other filling combinations to try: goat cheese and roasted red peppers, pepperoni and mushrooms, chicken and pesto.
