Ingredients

Dark chocolate
(80% dark organic)
1 1/2 cup
Black beans, canned
(rinsed and drained, 365 brand from Whole Foods is great)
2 large
Egg
2 tbsp
Coconut oil
1 tsp
Baking powder
1/4 cup
Cocoa powder, unsweetened
1 tsp
Vanilla extract, pure
1/2 tsp
Salt
1/4 cup
Applesauce, unsweetened
(organic)
1/4 cup
Maple syrup, pure
1/2 cup
Walnuts
(unsalted chopped pieces)
6 leaf
Mint, fresh
Instructions
Preheat oven to 350F.
Grease a square baking dish with coconut oil. Then dust the pan with cocoa powder.
Melt dark chocolate in a small saucepan over low heat with 1 tablespoon of water mixed in to help it melt.
Drain and rinse black beans.
Combine in a food processor, beans, melted chocolate, eggs, coconut oil, baking powder, cocoa powder, vanilla, salt, applesauce, mint leaves, and maple syrup.
Process until smooth.
Just before pouring the mixture into the baking dish, stir in the walnuts.
Bake in the oven until the top is dry and the edges pull away from the sides, about 30 minutes.

NOTES:
- you can use peppermint leaves or peppermint extract for a stronger essence.
- Add 1 serving of your favorite protein powder to increase protein content.
- Use 6 pitted dates instead of maple syrup for natural sweetness with more fiber.
