1 medium Yellow onion (chopped)
1 medium pepper(s) Yellow bell pepper (chopped)
3 clove(s) Garlic (minced)
2 can (15oz) Black beans, canned (rinsed and drained)
426 gm Pumpkin, canned
1 can(s) (14oz) Diced tomatoes, canned (undrained)
3 cup Chicken broth (stock)
2 1/2 cup, diced Turkey breast (cubed)
2 tsp Parsley, dried
2 tsp Chili powder
1 1/2 tsp Cumin
1 1/2 tsp Oregano, dried
1/2 tsp Salt
1/2 avocado(s) Avocado (cubed)
2 green onion (stem) Green onion, scallion, ramp (thinly sliced)


In a large skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender. Add garlic; cook 1 minute longer.

Transfer to a 5-qt. slow cooker; stir in the next 10 ingredients. Cook, covered, on low 4-5 hours. If desired, top with avocado and green onions. Yield: 10 servings (2-1/2 quarts).
