1/3 avocado(s) Avocado
1/2 cup Black beans, canned (drained, rinsed)
4 large egg Egg white
1/2 tsp Extra virgin olive oil
1/4 medium Red onion (chopped)
2 tbsp Salsa, ready-to-serve


Sauté the onions in the oil in a non-stick pan. Add eggs and scramble/cook.

Once eggs are near cooked, stir in beans and cook just long enough to heat them up.

Transfer to a plate and top with salsa and avocado.
