1 1/3 kg Black-eyed peas, canned (drained, rinsed)
3 clove(s) Garlic (finely minced)
3 sprig Thyme, fresh
1 tbsp Extra virgin olive oil
1 pinch Salt and pepper (to taste)
1/4 cup Parsley, fresh (chopped, or dill, to taste)


In a medium saucepan, combine drained peas, garlic, thyme, and oil, plus 1 cup of water. Bring to a boil then reduce the heat and simmer, covered, for 10 minutes.

Uncover, season with salt and pepper, and allow to stand uncovered until needed. Just before serving, stir in the parsley or dill.

Serve in small bowls.
