Ingredients


1/2 small squash Butternut squash (halved and deseeded)
1/2 squash Kabocha squash (halved and deseeded)
2 small shallot(s) Shallots (quartered)
2 cup Vegetable stock/broth
3/4 cup Partly skimmed milk, 2% M.F.
1/4 tsp Nutmeg, ground

Instructions


  1. Place the squash, shallots and broth in the slow cooker. Cook on low for 8 hours or high 4 hours, until soft and cooked through, a knife should easily be inserted. 
  2. Remove squash from skin and discard the peel. Stir in milk and nutmeg. Blend in a blender or using an immersion blender.
  3. Season to taste with salt and pepper and garnish with more coconut milk and chives, if desired.
