1/2 tbsp Baking powder
1/4 cup Flaxseed meal (ground)
1 medium egg Egg white
1/2 tsp Nutmeg, ground
2 tbsp Frozen blueberries
1 tbsp Maple syrup
1/2 tsp Orange peel (zest)


  1. Mix baking powder, nutmeg, and flaxseed meal together thoroughly, and then add egg white, syrup, and zest.
  2. Pour into an oversized coffee cup that you have sprayed with oil (such as organic coconut oil spray) and put in the microwave for 90 seconds.
  3. This will make a tall muffin. If you prefer a flatter muffin (more like a muffin top) use a small, shallow cereal bowl.
  4. Top with a little maple syrup if desired.
