1/2 tbsp Baking powder
1/2 tsp Nutmeg, ground
1/4 cup Flaxseed meal (ground)
1 medium egg Egg white
1 tsp Maple syrup (sugar free ED Smith)
1/2 tsp Orange peel (zest)
2 tbsp Frozen blueberries


  1. Mix baking powder, nutmeg, and flaxseed meal together thoroughly.
  2. Add egg white, maple syrup, and zest.
  3. Pour into an oversized coffee cup that you have sprayed with oil (such as organic coconut oil spray) and put it in the microwave for 90 seconds.
  4. This will make a tall muffin. If you prefer a flatter muffin (more like a muffin top) use a small, shallow cereal bowl.
  5. Top with a little maple syrup if desired.
