Blueberry Lavender Scones

1/4 cup Almond milk, unsweetened
1 tbsp Applesauce, unsweetened
1 tsp Baking powder
1/2 tsp Baking soda
1/4 cup Blueberries
1 tsp Coconut oil
1 tbsp Coconut sugar
1 tsp Lavender, fresh
1 cup Spelt flour


Preheat oven to 400F.

In a medium bowl, mix all dry ingredients including blueberries.
Break the coconut oil up into the dry mixture, add applesauce and almond milk. Do not overmix!

It should form a fairly dry ball. If it is too dry to combine, add a little more almond milk a tbsp at a time.

Transfer onto a parchment lined baking tray, slightly flatten the ball then cut into triangles (approximately 5) and spread the triangles out.

Bake for 10-12 minutes.
